We are seeking a dedicated and professional Chef / Cook to become an integral part of our dynamic, fast-paced kitchen team. This is a challenging, hands-on role requiring the ability to remain calm under pressure and consistently lead by example.

Chef Responsibilities:

  • Kitchen Operations: Ensure the smooth running of the kitchen by coordinating effectively with all staff.
  • Food Quality & Presentation: Guarantee all cooking, meal preparation, and presentation (including special dietary needs) meet client requirements and adhere strictly to quality assurance, hygiene, and cleanliness standards.
  • Menu Development: Lead the culinary team in creating, developing, and executing a diverse and appealing menu to enhance the customer dining experience.
  • Culinary Innovation: Inject creativity and flair into dishes, showcasing expertise and keeping the menu fresh and exciting. Experiment with recipes and suggest new ingredients.
  • Team Leadership & Training: Manage, mentor, train, and inspire the kitchen brigade, fostering a positive, collaborative, and skilled work environment. Stay current with industry trends and share knowledge with the team.
  • Quality & Safety Control: Implement and maintain rigorous quality control measures for food safety, hygiene, taste, and freshness. Ensure out-of-date items are discarded promptly.
  • Menu Refinement: Conduct regular menu tastings and evaluations to identify areas for improvement.
  • Cost & Inventory Management: Collaborate with management to control food costs, optimize kitchen efficiency, monitor food stock, place orders, and contribute to overall profitability.
  • Sourcing: Source high-quality ingredients while adhering to cost-effective practices.

Cook Responsibilities:

  • Prepare and assemble ingredients accurately for menu items.
  • Cook high-quality meals and food items following company recipes and standards.
  • Store food items correctly (temperature, labeling) to prevent spoilage.
  • Ensure food portions and presentation meet company standards.
  • Monitor inventory levels and assist with re-ordering stock as needed.
  • Maintain cleanliness of cooking utensils before and after use.
  • Clean and sanitize food preparation areas regularly.
  • Collaborate with team members to ensure timely completion of food orders.
  • Assist in resolving any issues with customer orders efficiently.
  • Adhere strictly to all food health and safety regulations.
  • Perform other duties as directed by the Chef or Management, within the scope of skills.

Chef Requirements and Skills:

  • Proven experience working as a Chef in a similar environment.
  • Advanced knowledge of culinary arts, cooking techniques, and best practices.
  • Meticulous attention to sanitation, hygiene, and quality control.
  • Demonstrated creativity in menu development (portfolio preferred).
  • Excellent multitasking and organizational skills.
  • Strong leadership, communication, and interpersonal skills.
  • Proficiency in inventory management, stocktaking, and ordering.
  • Ability to thrive and maintain composure in a high-pressure, fast-paced environment.
  • Genuine passion for food and delivering exceptional dining experiences.
  • Exemplary work ethic.

Cook Requirements and Skills:

  • Sound knowledge of cooking methods, techniques, and kitchen equipment.
  • Ability to accurately follow recipes and instructions.
  • Strong teamwork and collaboration skills.
  • Physical ability to stand for extended periods and perform kitchen tasks.
  • Good communication skills.
  • Reliable and punctual work ethic.

Qualifications:

  • Certificate III or IV in Commercial Cookery and a Diploma in Hospitality Management (or demonstrably equivalent qualifications and experience).
